Light and refreshing tofu lettuce cups, perfect for a summer dinner. This recipe is also great for meal prep, with extra tofu usable in salads, bowls, or as a snack. A friendly recipe from @thebossbodyrevolution.
1. In a small blender, add peanut butter, sriracha, chili garlic sauce, soy sauce, toasted sesame oil, agave, garlic, and ginger. Blend until incorporated, adding water if needed. Set aside.
2. Mix all ingredients for the slaw together. Set aside.
3. Heat oil in a pan. Once hot, add cubed tofu and sauté until golden brown.
4. Add diced onions and bell pepper to the pan. Sauté for a couple of minutes.
5. Add the prepared peanut sauce to the pan and mix well with the tofu and vegetables. Cook for about 2-3 minutes.
6. Fill lettuce cups with the tofu mixture, then top with the slaw, a squeeze of lime juice, more sesame seeds, and crushed peanuts (optional). Enjoy!
