2. Mix all of the ingredients into a bowl.
3. Transfer it into your oiled casserole dish.
4. Bake for 20 minutes. Uncover. Sprinkle with the cheese.
5. Bake, uncovered, for 25 minutes or until the sweet potatoes are tender.
6. Add chopped cilantro and serve warm.
