Pesto Burrata Sandwich with Homemade Pesto

**Classic Pesto:**

1. In a food processor, add basil, pine nuts, garlic, chilies (if using), salt & pepper, and 1 cup of parmesan cheese. Mix until chopped.
2. Add in the lemon juice, then slowly stream in 1 cup of olive oil while processing until well combined.
3. Store in an airtight jar in the fridge for up to a week.

**Sicilian Pesto:**

1. In a food processor or chopper, blend all ingredients: cherry tomatoes, 1/2 cup basil, 1/2 cup parsley, 3 garlic cloves, 1 Thai chili, 1 tbsp red crushed pepper, salt, pepper, 1/3 cup almonds, 1/3 cup olive oil, and 1/3 cup parmesan cheese. Blend until combined.

**Assemble the Sandwich:**

1. On one side of a demi baguette or bread of your choice, spread a layer of classic pesto.
2. Layer with thinly sliced onions, tomatoes, and arugula. Season each vegetable layer with salt & pepper and a drizzle of extra virgin olive oil.
3. Top the veggies with burrata, then drizzle with balsamic glaze and season with salt and pepper.
4. Spread Sicilian pesto on the other side of the bread and close the sandwich. Enjoy!
