Masala Bread Omelette

1. In a bowl crack the eggs, add in onions, tomato, chilies, turmeric, red chili powder, cumin coriander powder, salt & pepper, and cilantro. Mix well until everything is incorporated.
2. Heat a pan and drizzle with oil, once hot toast the bread on both sides.
3. Add more oil then add 1/2 of the egg mixture. Add 2 slices of bread on top of the egg mixture, turn the slices to coat it in the eggs then turn it back.
4. Let the egg cook then flip the whole omelette with the bread, so the bread is in the bottom of the pan.
5. Add cheese slices on top of the omelette then fold the sides in. Close the sandwich, cook for a min or until the cheese has melted.
6. Enjoy!!
